Pork tenderloin ¾ pound
Juice of 1 lime
Olive oil 2 teaspoons
Ground cumin 1 tablespoon
Ground coriander 1 teaspoon
Salt ¼ teaspoon
Freshly ground pepper to taste
  • Preheat oven to 500ºF.
  • Rub the pork with the lime juice, and then drizzle with the oil. Season all sides of the pork with the cumin, coriander, salt, and pepper.
  • Roast pork in center of oven for 20 minutes. Remove the pork, tent it with foil, and let it rest 10 minutes before serving.
